I've been trying to incorporate more fish into my weekly meals for the nutritional benefit. The hardest part is that my husband has no interest in most types of fish. If it doesn't come from the Scottish Rite fish fry, Shawn's not going to eat it.

This recipe only took me 15 minutes to make.

I was home today while Shawn was gone, so I had a meal all to myself, which meant I should go for the fish. I love a recipe from Skinny Taste for blacked salmon taco bowls, but I didn't have all the ingredients on hand. I took the idea though, and threw together these quick salmon tacos with what I had in the fridge. The air fryer (we've had ours for 4 years!) makes this meal so quick! Air Fryer Salmon Tacos


Ingredients


You can customize these ingredients as much as you'd like, but here's what I used to make 2 tacos:


  • 1 frozen salmon fillet

  • 1 tbsp olive oil (divided)

  • 2 tsp Trader Joe's salmon rub

  • 2-3 large brussels sprouts

  • 2 tortillas

  • Bolt House Farms cilantro avocado dressing

  • Salt

  • Pepper

Directions


Directions should always be short and to the point.

  1. Preheat a medium sized skilled over medium heat with 2 tsp olive oil.

  2. Thinly slice the brussels sprouts and add to the heated skillet and salt and pepper to taste.

  3. While the brussels sprouts cook, slice the salmon into bite-sized chunks. Add the salmon to a small bowl and drizzle with the remaining olive oil and the salmon seasoning rub.

  4. Cook salmon in the air fryer at 400F for 7 minutes, shaking halfway through.

  5. When the salmon is cooked and the brussels sprouts are crispy, divide into two tortillas and top with cilantro avocado dressing
